KanonkopThe name "le coup du canon" comes from local history: a cannon shot was fired to warn the population of the arrival of a merchant ship in port. The estate was founded in 1910 by the Sauer family, who donated several ministers to the Republic of South Africa. Johann and Paul Krige, the fourth generation of the family, now run the estate, assisted by Beyers Truter, who has been in charge of vinification since his arrival in 1985. It was around this time, in the midst of Apartheid and the country's total economic and political isolation, that Kanonkop began to make a name for itself and prove to the world South Africa's potential for producing quality wines.

Kanonkop 's red wines are always among the best, with a dimension of finesse and ageing potential that is not far from unique in the country. The vineyard is located at the foot of the Simonsberg mountains, less than 10 km north of the town of Stellenbosch, on slopes rising to 120 m above sea level. It covers some one hundred hectares planted with old vines (most of them 50 years old), planted exclusively with red grape varieties including, in order of importance, Pinotage, Cabernet Sauvignon, Merlot and Cabernet Franc. Yield control and the quest for ripeness are the two main concerns in the vineyard. In the cellar, we remain faithful to the traditional old concrete vats in which the grapes are still crushed at the foot, and we favor long ageing with a reasoned use of new wood. Kanonkop 's red wines are characterized by great elegance and impeccable balance.

"Composed of 75% Cabernet Sauvignon, 14% Cabernet Franc and 11% Merlot, the 2019 Paul Sauer offers aromas of oaky pencil lead, turned earth and dark red and black fruit flavors on the nose before layers of oak spice and blackberry floral notes emerge. Medium-bodied, the wine is still youthful with a juicy, tannic edge, while succulent acidity and a pop of bright red fruit flavors radiate through the mid-palate. The finish is firmly tannic and needs a little time in bottle to find its rhythm. Give it two more years, and drink it over the next two decades." (Wine Advocate 2022)
