The palate is full-bodied, with a good concentration of raspberries and red plums. A touch of licorice lingers on the finish. This wine is still young, but ready to drink now or cellar until 2035." The palate is medium-bodied with slightly powdery tannins, leaning more towards pruney black fruits with, again, a hint of licorice on the nicely concentrated finish. "Composed of 75% Cabernet Sauvignon, 14% Cabernet Franc and 11% Merlot, the 2019 Paul Sauer offers aromas of oaky pencil lead, turned earth and dark red and black fruit flavors on the nose before layers of oak spice and blackberry floral notes emerge. Medium-bodied, the wine is still youthful with a juicy, tannic edge, while succulent acidity and a pop of bright red fruit flavors radiate through the mid-palate. The finish is firmly tannic and needs a little time in bottle to find its rhythm. Give it two more years, and drink it over the next two decades." (Wine Advocate 2022)
