Named after a 12th-century grain mill on a hill. Crumbly granite arenas, infiltrated here and there by crystalline rocks.

Viticulture

Short goblet, 3 to 5 spurs of 2 eyes each, debudding and de-cavaillonage in autumn, ploughing in winter and scabbling in spring.

Winemaking

After hand-picking and selective sorting of whole bunches; traditional method, temperature controlled by thermoregulation, grapes immersed in juice during fermentation (toasting), carbonic maceration for 10 to 12 days.

Breeding

Stainless steel and cement vats, malolactic fermentation in Foudre, corresponding to an ageing period of around 10 months. The wines are clarified and filtered using as many natural and traditional processes as possible. Each vineyard parcel is vinified separately to achieve the best balance between structure and finesse.
