Cadillac Côtes de Bordeaux
Cadillac Côtes de Bordeaux or Côtes de Bordeaux are the new appellations granted specifically since November 1, 2009 to red wines produced from the Premières Côtes de Bordeaux appellation. The latter does not disappear, but remains reserved for sweet and syrupy white wines produced on the terroir. The Cadillac Côtes de Bordeaux vineyard stretches over a 60 km strip on the right bank, following the Garonne River from Bordeaux upstream to Langon.

With generous sunshine and clayey-limestone or clayey-gravelly soils, the Cadillac Côtes de Bordeaux appellation benefits from remarkable natural factors. Well-drained by the natural slope, the soils have fine elements, such as silty clays, in the lower parts and coarser elements, such as pebbles and gravels, as they climb the hills. The 3,450 hectares of Cadillac Côtes de Bordeaux vines produce around 180,000 hectolitres of red wine.

The blend is dominated by Merlot, which gives the wine roundness, fullness and friendliness, even when young. This grape variety is combined with Cabernet Sauvignon, which gives spicy flavors and good tannic support, Cabernet Franc, for its finesse and delicate nose, and, in small proportions, Malbec, which brings suppleness, lightness and a note of originality. Cadillac Côtes de Bordeaux wines have a dense purple to black color. Fruity by nature, these wines are best enjoyed young. However, their tannic structure allows them to age well. Over time, Cadillac Côtes de Bordeaux develop tertiary aromas such as venison, mocha and leather.
