Terroirs

Quaternary alluvium, mainly clay and limestone. Vineyards planted on the southern and south-western slopes of hills 110 to 140 metres high.

Harvest

Mechanical harvesting during the cold hours of the day between 5 and 8 o'clock in the morning, destemming on the vine to avoid maceration of plant debris and crushing. at harvest reception

Winemaking

Skin maceration, cold and under inert gas for the muscadelle and semillon and 6 to 8 hours for the sauvignon, pneumatic pressing at low pressure (maximum 1.6 Bar) under inert gas, settling by flotation under inert gas, alcoholic fermentation in stainless steel tanks thermo-regulated between 15 and 17°C.

On fine lees for several months with regular stirring

About the domain :

Jean-Luc Buffeteau, who returned to the family land in 1998, manages 29 ha of vines on the rolling hills of the Entre-deux-Mers region, in the heart of the Sauveterrois, in the communes of Castelviel and Gornac. He produces two labels, La Grande Métairie and Haut Dambert.
