Traditional in white: pneumatic pressing, alcoholic fermentation in vats with temperature control, indigenous yeasts, malolactic fermentation.

The barrels are topped up with yeast, with the exception of around 15% of Savagnins matured under yeast veil, as for Vin Jaune, maturing for 15 to 36 months for topped-up wines and 2 to 3 years for wines under yeast veil.

About the domain :
This vast estate in the communes of Arbois and Pupillin was founded by the Burgundian Roger Martin, who, by planting 14 hectares of Savagnin in the 1950s, made it the largest vineyard in the Jura devoted to this grape variety. Today, Pierre, his son, and Vincent, his grandson, are in charge. Organic viticulture has been practiced here since 1999, and biodynamic since 2009. Many older vintages are still available at low prices.
