"A Wonder
This pure, high-altitude Grenache Noir has a deep, dark color. Its explosive nose is intensely perfumed with camphorated and mentholated notes and pure fruit. The palate is harmonious, suave and powdery, with firm yet elegant tannins. A wine balanced by lively freshness and a long, spicy finish. A very fine bottle!

De-stemming, foot treading at vatting in stainless steel vats, fermentation with indigenous yeasts, long vatting time, extraction, pumping over and light punching of the cap, slightly prolonged maceration after the end of the sugars, heating of the bottom of the vat to promote autolysis.
Breeding
Aged 9 months in 228L barrels, barrels of 1 to 5 wines from the Chassin, Damy, Gillet and François Frères cooperages.

About the domain :
Gaëlle and Florian met in Burgundy and decided to settle in the Languedoc region in early 2010. After a few years of research, the Franco-German couple settled in Fontjoncouse, where they cultivate plots of old vines. Careful attention is paid to barrel ageing. A great boost for this wild and stony sector of the Corbières. This is an estate that will go far!
