Short cold pre-fermentation maceration, fermentation with indigenous yeasts. Co-fermentation of Syrah/Carignan whole berries. Extraction by gentle pumping over only. Devatting at the end of alcoholic fermentation. Blending of free-run and press wines for the end of sugars. Racking and blending at the end of malolactic fermentation.

About the estate:

Gaëlle and Florian met in Burgundy and decided to settle in Languedoc in the early 2010s. After several years of searching, the Franco-German couple settled in Fontjoncouse, where they cultivate plots of old vines. The wine is carefully aged in barrels. This is a wonderful initiative in this wild and rocky part of the Corbières region. This is a winery that will go far!
