About the domain :
La Réserve d'O is a ten-hectare estate located in Arboras, in the hills above the Terrasses du Larzac. Founded in 2004 by Frédéric and Marie Chauffray, and run according to biodynamic principles, it has quickly become one of the area's favorite addresses. The cuvée that bears the estate's name has a very gourmet, long-lasting style, with no aging in wood. It has evolved a great deal, and since 2011 has been one of the Languedoc cuvées that count. Bilbo, in homage to the city of Bilbao, is predominantly Cinsault, while hissez-o has a higher proportion of Syrah. These are good representatives of the Terrasses du Larzac appellation, in a rather fleshy style.

Situated high up on the Causse d'Arboras, the vines (12 ha) seek out the earth beneath the stones. Established in 2005, Marie, the new president of the Terrasses du Larzac syndicate, and Frédéric Chauffray work biodynamically, using gentle methods (minimum SO2, no yeasting, fining or filtration) to produce grapes that are carefully selected.

About the domain :
Frédéric Chauffray has two passions: rock and wine. In the end, he chose between his Gibson guitar and winegrowing. A wine merchant with his wife Marie since 1990, in 2004 he moved to the Terrasses du Larzac, in the commune of Arboras, at an altitude of some 400 meters, to found Réserve d'O. Thanks to this cool geographical location, in the foothills of the Larzac plateau below the Col du Vent, and a highly respectful, low-interventionist agronomic approach, the couple soon signed up for open, joyful wines, far removed from the more austere, Jansenist signatures of some wines in the area. The precise management of aromatics and tannins leads us to award this estate its first star.

A medium-bodied red with creamy tannins and notes of black cherries, bay leaves, wild herbs and sweet spices. Juicy and well-balanced, with good mid-palate volume and a tasty, textured finish. Made from Demeter-certified biodynamically grown grapes. For drinking or cellaring.

After a very difficult 2021, Bachi-Bouzouc delivers a vibrant, very fruity juice in 2022. Ample, full and silky on the palate, the freshness of stewed, slightly tart black fruits is complemented by herbaceous and licorice notes, rather than the roundness and greedy intensity of the red fruits of its cousin Bilbo. The finish is dense and long-lasting, with hints of licorice. An optimistic price that brings the score down to 3.8. A cuvée of immediate pleasure, to be enjoyed on the fruit, and which will remain very open for three years. Pairs well with Berber couscous with Lozère lamb.
