Le Clos du Serres
Le Clos du Serres he 15-hectare estate has been run by Béatrice and Sébastien Fillon in St Jean de Blaquière since 2006. Nicolas Molard, their brother-in-law, joined them in 2011. Located 50 km northwest of Montpellier, the Clos du Serres is farmed organically, and yields are limited to an average of 30 hl/ha. "Greenhouses"in Occitan means being surrounded by hills. In fact, the domaine's vineyards are located in the heart of a wild and preserved natural environment: Lac de Salagou, Gorges de l'Hérault, cirque de Mourèze St Guilhem le désert, Causse du Larzac... The vineyards of Clos du Serres enjoys both a Mediterranean and mountain climate, with the sea to the south and the Larzac plateau to the north, with Mont Baudille reaching 849 meters.

Each cuvée is meticulously hand-picked, carefully sorted and vinified on a parcel-by-parcel basis, allowing each terroir to express itself through the wines it produces. The Clos du Serres range of wines focuses mainly on reds and the Terrasse du Larzac appellation's lieux-dits, recognized as AOC since 2014: Saint-Jean, Les Maros, Sainte-Pauline, Le Palas, and l'Humeur Vagabonde (century-old carignans). A rosé "Entre Amis" and a white "Le Saut du Poisson" in AOP Languedoc complete the offer of this rising estate, as well as a red "Plan B", without added sulfites.

"A very confidential parcel on the Ruffes terroir, to be discovered urgently!

A fine, mineral nose with notes of anise and laurel. Fat on the palate, but the finesse quickly comes through. Beautiful aromatic complexity on white fruits without becoming perplexing, balanced by superb freshness.
