"Subtle scents of orange zest, menthol, garrigue, black fruit and violets lend lovely complexity to this generous, racy 2015. Lots of roundness and chewiness characterize the palate, which is vinous, dense and silky, centered on black fruits, cinnamon and clove. A sunny, ready-to-eat wine that can also be kept. Expert opinion
Bettane & Desseauve
Rated (2018 guide) 15.5/20 (Very good wine)
Domain rated (guide 2024) 2*Stars (A serious and recommendable production, but a little more regular and homogeneous than the previous one)
About the wine:
Well-constituted but present tannins in this red on sandstone and schist. This is the estate cuvée that deserves a little ageing before you start drinking it.
About the domain :
Clos du Serres was created in 2006 in Saint-Jean-de-la-Blaquière, in the foothills of the Larzac mountains, at an altitude of almost 300 metres. Vintage after vintage, we find the same systematic quest for sincerity. The range has been remodeled around Maros on schist, with its balance between density and drinkability; Sainte-Pauline, on sandstone and galets roulés, supple and greedy; Palas on sandstone and schist, sappy and firm; and Saint-Jean, rounded and tasty, a blend of terroirs. Humeur-vagabonde comes from a Syrah and a Carignan that few are capable of bringing to this level of charm: youthful on the palate, it doesn't look a day over 85. But the whole range differs only in nuances, with the domaine's signature strongly permeating all the cuvées, the originally rather powerful style evolving into much more airy nuances - bravo!

About the domain :
Between the sun of the Hérault and the fresh air of the Aveyron, on a mosaic of schist, pebbles and red sandstone, Sébastien Fillon took over this 15-hectare estate in 2006. This chemical engineer by training, assisted by his wife Béatrice, now manages his vineyard using organic farming methods.

About the wine:
Another extraordinary wine with this Terrasse du Larzac 2015 Le Palas, which is a Syrah-dominant cuvée. It offers aromas of black raspberries, toasted spices, licorice, graphite touches in a ripe, balanced and textured style. Made exclusively in concrete vats, this superb Terrasse du Larzac can be drunk until 2025.
RVF - La Revue du Vin de France / Guide des Meilleurs Vins de France
Domaine rated (2025 guide) 1*Star (Stars in the making or quality winegrowers with a good level of production, you won't be disappointed when you taste the wines from these estates)
About the domain :
Founded in 2006 by Béatrice and Sébastien Fillon in the Saint-jean-de-la-Blaquère area, in the heart of the Terrasses du Larzac, this 15-hectare estate benefits from both geological diversity (schists, ruffes, sandstones and pebbles) and a wide temperature range between day and night. In the vineyard, our approach is highly respectful of the grapes and the ecosystem. In the cellar, built of Gard stone, wood has no place: the wines are vinified by parcel and aged exclusively in concrete vats. The emphasis is on the purest expression of terroir and raw material. This is evident in the wines, which are full of personality, tactile and complex, leading us to award the domaine a star.
