Larzac Terraces
Located northwest of Montpellier, the Terrasses du Larzac vineyard is characterized by the coolness that descends from the Larzac mountain plateau, with Mont Baudile, rising to over 850m, as its symbolic landmark. This unique geographical location, with day/night temperature variations of up to 20 degrees in summer, promotes slow and gradual ripening of the grapes, which is beneficial for the aromatic complexity and freshness of the wines.

To reveal the full greatness of this terroir, the winegrowers of Terrasses du Larzac use a range of five Languedoc grape varieties (Grenache, Syrah, Mourvèdre, Cinsault, and Carignan) to best express the personality of each type of soil (clay-limestone, ruffes, pebbles, etc.), knowing that here the terroir takes precedence over the grape variety. Finally, through meticulous blending (at least three grape varieties) and aging for at least 12 months, the winemakers give the appellation's wines a unique signature.

Since 2014, the Larzac Terraces are an AOC in their own right.

Terrasses du Larzac: red wines with a taste of the terroir

Located in the Occitanie region, between Causses and Cévennes, Larzac is a territory covering more than 1,000 km². Rich in unique cultural heritage and blessed with exceptional biodiversity, it has been listed as a UNESCO World Heritage Site since 2011. At the heart of this remarkable landscape lies the Causse du Larzac, a karst plateau between Aveyron and Hérault, 50 kilometers north of Montpellier. Nestled against its flank are the Terrasses du Larzac vineyards, covering more than 560 hectares of planted vines.

A climate specific to this Languedoc terroir

This crescent-shaped wine-growing region in Languedoc lies at an average altitude of 300 meters. Bordered by limestone cliffs, temperatures here are cooler than in the rest of the region. In summer, the temperature difference between day and night can reach up to 14°C. This unique climate allows the grapes to ripen very gradually, giving Terrasses du Larzac red wine its aromatic complexity and freshness.

Les Terrasses du Larzac, an appellation d'origine contrôlée (AOC)

Thanks to its exceptional terroir and the hard work of its winegrowers, Terrasses du Larzac wines have enjoyed their own appellation d'origine contrôlée (AOC) since 2014. The Terrasses du Larzac AOC covers more than thirty communes in the north of the Hérault department, where nearly 90 independent winegrowers and 5 cooperatives work every day to promote their wine production. When harvest time comes to the mountainous plateau, the grapes are picked at the right stage of ripeness and processed using traditional winemaking methods. In order to offer an organic Terrasses du Larzac AOC wine, winemakers have chosen to turn to organic viticulture and winemaking, which are necessary to obtain the "Agriculture Biologique" label.

A blend of grape varieties to offer the best of Languedoc

Terrasses du Larzac wine, exclusively red, is made from a blend of at least two grape varieties. Among the five main varieties that winegrowers can select are Grenache, Mourvèdre, Syrah, Cinsault, and Carignan. The latter, long disparaged and shunned, has regained its Languedoc identity through perseverance. Beyond the grape variety itself, winegrowers are committed to allowing the specific characteristics of the soil to express themselves in each of their wines, whether they are clay-limestone, pebble or ruffes (an Occitan name for a red rock found in the Languedoc, composed of clay and iron oxide). To bring out the best of this terroir, the red wine with a controlled designation of origin is aged for at least 12 months, after which it can reveal its aromas and unique signature.

Les Terrasses du Larzac: the flavor of quality wines

On tasting, Terrasses du Larzac red wine has a beautiful bright ruby color with intense purple highlights. It is a spicy wine with aromas of garrigue and pronounced notes of thyme and bay leaf. Complex and balanced, it has a very fresh attack. Powerful and often tannic, it is nonetheless light. Bottles of Terrasses du Larzac wine can be kept for between 3 and 5 years.
