The wine is almost ready to drink, the tannins are beginning to mellow, the palate is complex, bursting with the flavors of the garrigue.
About the domain :
Clos du Serres was created in 2006 in Saint-Jean-de-la-Blaquière, in the foothills of the Larzac mountains, at an altitude of almost 300 metres. Vintage after vintage, we find the same systematic quest for sincerity. The range has been remodeled around Maros on schist, with its balance between density and drinkability; Sainte-Pauline, on sandstone and galets roulés, supple and greedy; Palas on sandstone and schist, sappy and firm; and Saint-Jean, rounded and tasty, a blend of terroirs. Humeur-vagabonde comes from a Syrah and a Carignan that few are capable of bringing to this level of charm: youthful on the palate, it doesn't look a day over 85. But the whole range differs only in nuances, with the domaine's signature strongly permeating all the cuvées, the originally rather powerful style evolving into much more airy nuances - bravo!

About the domain :
Between the sun of the Hérault and the fresh air of the Aveyron, on a mosaic of schist, pebbles and red sandstone, Sébastien Fillon took over this 15-hectare estate in 2006. This chemical engineer by training, assisted by his wife Béatrice, now manages his vineyard using organic farming methods.

About the domain :
Founded in 2006 by Béatrice and Sébastien Fillon in the Saint-jean-de-la-Blaquère area, in the heart of the Terrasses du Larzac, this 15-hectare estate benefits from both geological diversity (schists, ruffes, sandstones and pebbles) and a wide temperature range between day and night. In the vineyard, our approach is highly respectful of the grapes and the ecosystem. In the cellar, built of Gard stone, wood has no place: the wines are vinified by parcel and aged exclusively in concrete vats. The emphasis is on the purest expression of terroir and raw material. This is evident in the wines, which are full of personality, tactile and complex, leading us to award the domaine a star.

Tasted in January 2021, a fine full-bodied wine, still a little shy. Nice liquorice finish, needs a little more ageing.
