About the domain :

Mas Conscience has changed hands and is now run by Audrey Bonnet-Koenig, who was previously in charge of technical aspects at Château de Sérame and now runs La Peira after a spell at Dubourdieu. She is assisted by renowned oenologist Claude Gros. Let's wish this new team every success in perpetuating the qualitative renewal of this fine estate initiated by Nathalie and Éric Ajorque.

About the domain :

Created by Éric and Nathalie Ajorque, this 15-hectare organic estate at the foot of the Séranne massif was bought in 2000 by Roman Kocholl, who realized his dream after a long career in the digital sector in Hamburg. At the helm is Audrey Bonnet, an agricultural engineer and former director of Cave de la Peira, supported by Claude Gros, a renowned consultant oenologist.

The bouquet of this TDL surprises with its intense aromas of tart red and black fruits, enhanced by spicy and licorice notes. The palate is full-bodied and full-bodied, with graphite accents, a fine structure and straight, slightly harsh tannins, resulting in a well-balanced whole, without heaviness of style. The finish is persistent, muscular and firm. Let it breathe a little. Good R. Q/P. This youthful TDL awakened our taste buds with a sauté of Lozère lamb with black olives and rosemary, enhanced by a pinch of Espelette pepper. Score = 3.9.
