traditional tillage. No use of weedkillers. Phytosanitary treatments are as rational as possible and organic since 2011. Certified organic fertilizers.

Winemaking
grapes crushed and destemmed. Grenache and Syrah are fermented separately, with indigenous yeasts. Low-temperature fermentation, 2 to 4 delestages at the very start of fermentation, few pump-overs, and hot post-fermentation maceration. Vatting lasts approximately 30 days. Aged on fine lees, partly in wooden vats, partly in concrete tanks.

12 to 18 months, 50% in wooden truncated-cone tanks and 50% in concrete tanks.
