Cultivated on hostile soils, the Llendoner Pelut and Syrah vines produce small yields for this cuvée with Catalan overtones. Concentrated and delicate, Extrême rouge 2011 expresses itself on notes of black fruit and spices. A wine loaded with sunshine!

80% destemming (20% whole bunches), no crushing. Spontaneous fermentation for 21-44 days in new 500L French oak barrels after 3 days maceration in contact with the skin. Vertical pressing.

Breeding

in 500L barrels and stainless steel tanks on fine lees for 20 months. No fining. No filtration.

About the domain :

Paul Old cultivates these old vines between Corbières and Roussillon biodynamically. The minimalist approach in the cellar produces both highs (Prioundo and L'Extrême, in white) and lows, with gas saturation in certain cuvées and an occasional lack of clarity. The wines do, however, know how to age, and benefit from aeration.
