"Everything about this Persian wine is deep and powerful: its dark garnet color, aromas of blackcurrant, red berries, and spices, high-quality but still young tannins, well supported by wood and a fine acidity, the signature of this beautiful Savoyard grape variety that has been rediscovered. Worth waiting for." (Le Guide Hachette 2025)

Nose
Rich with violet and raspberry aromas
Mouth
Deep and fruity with great length. Rich in its youth with well-integrated woody notes, this is a wine made for aging. Persan does not reveal itself immediately; it can be enjoyed young for its freshness and liveliness, but with patience and a few years of aging, it will open up more and its tannins will soften.
Serve
At 16-18°C, may be decanted
Drink before
2038
Food and wine pairings
Pairs well with country ham and sausage, mushroom pie, veal liver, grilled meats...
Bettane & Desseauve
Winery rated 2 stars (A serious and recommendable production, but a little more consistent and uniform than the previous one)
About the estate:
This large 28-hectare estate was long run by André and Michel. Guillaume, Michel's son, arrived in 2009. The estate is located on the steep slopes of Torméry, south of Chignin. It was Guillaume's grandfather who replanted the vineyard in the 1950s. The estate avoids herbicides as much as possible but cannot work all its plots by hand. Guillaume is experimenting with organic farming on the two and a half hectares he took over to form the Côteau de Torméry estate. He is also experimenting with ageing in large oak barrels or sandstone vats. A wide and consistent range with promising innovations.

About the estate:
Michel Quénard took over the family estate, founded by his grandparents, in 1976. His son Guillaume joined him in 2009, after studying at the Beaune wine school and then at the Changins engineering school (Switzerland), and took over the reins of this estate, one of the most renowned in Savoie, which produces wines of consistently high quality, both red and white.
