Slow pressing in a pneumatic press, the juice flows into the cellar by gravity and is naturally clarified by sedimentation before fermentation. Fermentation in temperature-controlled stainless steel vats for 2 to 4 weeks.

About the domain :
The Ribeauvillé winery is slowly evolving to keep up with the times. Trimbach, which has made the switch to Grand Cru wines, is currently undergoing organic conversion (certification planned for 2023). The process will require the involvement of grape and wine suppliers. Here, Riesling is king (55% of volumes). The terroirs are ideal: marl-limestone (Geisberg, Mandelberg, Clos-saint-Hune au Rosacker) or granite (Schlossberg, Brand). The cuvée frédéric-émile blends the grand crus Osterberg and Geisberg. The 2017 and 2019 vintages will make history.

About the wine:
Produced from old vines grown on Keuper-dominated marl-limestone soils and made only in the best years, the golden-yellow 2015 Gewurztraminer Cuvée des Seigneurs Ribeaupierre opens with an intensely aromatic, dense bouquet of medium richness and complexity. On the palate, this is a very elegant Gewurz, refined and rich as well as complex and persistent with orange aromas on the round, elegant, well-balanced and structured finish. Thanks to its fine tannins and above all its vibrant, fresh salinity, the 2015 tastes less sweet than one might fear. In fact, it's a great food wine to pair with spicy, aromatic dishes or as a dessert itself. Mango and other tropical aromas throb in the stimulating aftertaste. 14% declared alcohol. Natural cork. Tasted in January 2023.

About the wine:
Spicy and fleshy, with a fairly sunny character, the Gewurztraminer is supported by a tightly wound material sprinkled with small bitters. It's worth waiting a little longer for it to loosen up.
About the domain :
Trimbach, a landmark winery that stands proudly in the beautiful city of the minstrels, delights wine-lovers with its legendary Frédéric-Émile and Clos Sainte-Hune cuvées. From vintage to vintage, Pierre Trimbach vinifies Riesling in a vertical, dry style. His brother Jean manages worldwide sales. They are now supported by the new generation, Anne and Frédérique (Pierre's daughters) and Pauline and Julien (Jean's children). The family vinifies close to 60 hectares of property and around 100 hectares of purchased grapes. Since 2009, some of the grand crus have been claimed by Jean Trimbach and directly allocated in small quantities to the world's finest tables. Jean Trimbach is making an undeniable contribution to the development of Alsace wines, with emblematic cuvées at international level, while producing entry-level wines of consistent quality. The Pinot Noir range still has room for improvement.

About the wine:
Bright, pale golden yellow. Aromas of mango, grapefruit and sweet spices. On the palate, more tropical fruit and honey; a lovely stony freshness brings remarkable clarity and sharpness. Much denser and richer than the entry-level Gewürz, but also better defined thanks to greater acidity. A fantastic Gewürz in the making. It's a real step forward in terms of concentration compared to the Reserve, and reminds me a little of the 1971 Gewürz.

Fresh cloves and white pepper. Also apple and pear. Full body, intense fruit with an oily but fresh and lively texture. White flowers present. Drink now.
