The family Michel has been involved in Chablis wine growing since 1850. Today, Guillaume and Jean-Loup Michel They manage the vineyard in keeping with the philosophy of their ancestors: vinification using indigenous yeasts, no use of barrels, minimal handling during vinification, long aging on lees, etc. All this while maintaining high standards in the vineyard. The rows are grassed, pruning methods are adapted, and the soil is worked. Each plot is maintained in such a way as to limit yields and thus produce high-quality Chablis wines.
