Using indigenous yeasts, partially de-stemmed harvest, fermentation in stainless steel and concrete vats, controlled fermentation temperatures starting around 15°C then gradually rising to 25°C, long vatting periods (20 to 35 days), punching of the cap and pumping over.

Breeding

By plot and by grape variety, 12 months in 500- and 600-litre demi-muids and in foudres, then harmonization of the blend 4 months in vats.

About the domain :

Rigor and care, intelligence and precision, along with a clear idea of what makes a great wine, have brought the reds of the talented Vincent Goumard to the top. They were exemplary classics that never tended towards austerity. The evolution, without losing any of these qualities, towards a confounding sensuality is the culmination of a cycle, where precision and finesse of tannins dominate. The whites are progressing, with a cuvée l'étincelle that is confoundingly fresh. New in 2020: the entire range will be bottled in Burgundy.

In red, Terre de Jonquières is very fair, with a fine balance of alcohol, fruit and freshness. Its velvety touch leaves a sanguine sensation.

About the domain :

In 2004, after a career in consulting, Vincent and Isabelle Goumard took over this beautiful estate founded in the early 1990s by Jean-Pierre Jullien. They had previously visited some twenty estates in Languedoc and Roussillon, but the power of the place, in the heart of the Terrasses du Larzac, won them over. The couple quickly demonstrated the full extent of their talent, with a very fine understanding of their plot of land and geological variations, a respect for plants and a high level of viticultural standards. Over the years, their style has become increasingly refined, with wines that are more and more delicate and complex, with elegant substance and magnificent ageing potential. Mas Cal Demoura is unquestionably one of the region's benchmarks. After an interesting but somewhat sub-par 2021 vintage, the estate produced a superb 2022. The third star is clearly in its sights.

The judicious blending of five regional grape varieties, skilfully vinified and well matured, has brought this superb Gem to the top in 2022. Terre de Jonquières is accomplished, its remarkable balance expressed in a profile that is both structured and refined, and eloquent in the purity of its stewed black fruits subtly combined with sweet spices and hints of undergrowth. The right mineral freshness of the frame dominates the tasting with great greed, while the rounded tannins deliver a fine, particularly silky texture. At this stage, the finish is slightly dry, but with a nice pepperiness. Still in its ascending phase, this TDL is sure to improve over the next eight years. A bargain! Decanted 2 h. before serving, the elegant side of this Grand Languedocien makes it a tasty option for tasting with festive tables garnished with roast partridge with grapes and foie gras sauce. Score = 4.5.
