Domaine Sérol
Biodynamically grown in the eastern foothills of the Massif Central, near the Loire gorges, Stéphane Sérol took over the estate in 1996. Together with his wife Carine, they cleared and replanted the best slopes on these high-altitude granite terroirs, situated between 400 and 500 m. Naturally, they chose to plant the historic Gamay Saint Romain grape variety. The 32 ha of Gamay and the 2 ha of Viognier are planted at high density and harvested by hand. In the cellar, extreme care is taken to ensure that vinification is as natural as possible. The emphasis is on the red range, which reveals the different personalities of the Gamay grape.

L'Incorruptible is the cuvée on which Stéphane Sérol intervenes the least: indigenous yeasts and very little sulfiting at bottling. It inspires the future philosophy of the domaine. With notes of blackberry and cherry supported by good acidity, this wine is crisp and delicious.
