Strictly sorted, the juices are distributed to be vinified in different containers (truncated-cone vats, concrete vats and stainless steel vats - approximately 1/3 of each). After malolactic fermentation, in early November 2016, the wine is separated into various containers (amphorae, barrels, concrete vats, half muid and stainless steel vats) for the ageing phase.
Breeding
Part of the volume is matured in the same way as Arcane Le Pape, using the Vinarium technique: the wines are transferred into small 200-litre barrels, which are themselves immersed in wine.

The full-bodied, voluminous 2016 Châteauneuf du Pape Arcane La Papesse displays surprising elegance for such a powerful wine. such a powerful wine. Remarkably dark and youthful in appearance, it delivers notes of leather, cedar and dried spices, all on a background of black cherries and prunes. black cherries and plums. The tannins are fine and silky on the mid-palate, fading gently to a persistent, slightly powdery finish. Impressive, with at least a decade of cellaring potential in front.

This is a complete, nuanced Châteauneuf du Pape that will continue to drink fabulously well over the next 15-20 years. This is a 100% Grenache wine that was aged in a third of truncated-cone, concrete and stainless steel tanks, as well as a small portion of 200-liter barrels.
