Pascal Clément
Drawing on his family's winegrowing heritage and 20 years' experience with various Burgundy estates, Pascal Clément started his own trading business in 2012 in Savigny-lès-Beaune. He moved into a 19th-century building with a vaulted cellar and a capacity of 200 barrels. At the same time, Pascal Clément built a new winery equipped with stainless steel vats.

Pascal Clément works with winemaker-partners who share the same philosophy of respect for the terroir. Most of the vineyards are farmed organically, some biodynamically.

Pascal Clément's range of wines is based on parcel selections, reflecting the geology and the various exposures and micro-climates. It extends from the Côte de Beaune to the Côte de Nuits. To best express the specificities of each selected terroir, Pascal Clément uses only indigenous yeasts in the vinification of his wines.

A 1er cru ideally situated just below the grand cru Corton Bressandes from which it derives its femininity and elegance, Les Valozières boasts a dark ruby, almost crimson color and a lovely bouquet of red fruits. Robust and distinguished, the palate is characterized by a firm, structured body, rich in chewiness and a very fine balance of tannins and acidity.

Pommard's fame in the 19th century gave it the image of a virile wine. In reality, terroirs, vinifications and age nuance this portrait to offer a wine rich in sensitivity. This deep red offers notes of red and black berries, pepper and dried flowers, and can develop notes of leather and chocolate over time. All the more reason to let it age a little so that it opens up fully, offering a round texture and a delicate, assertive structure.

Like an unfolding map, the Savigny-les-Beaune landscape widens between the Montagne de Corton and Beaune. In its ruby color, this Savigny is discreetly tannic, preserving its red fruit flavors.
