Domaine du Pas de l'Escalette
Domaine du Pas de L' Escalette extends its vineyards over 10 hectares on limestone scree terraces surrounded by low dry stone walls called "clapas", nestled at an altitude of 350 meters at the foot of the Larzac plateau in the Languedoc region. The valley in which the Domaine du Pas de L' Escalette vineyards are planted faces north-south, offering two exposures, sunrise and sunset, and the soil has a unique water regime, filtering and draining well (water from the plateau is abundant). The causse du Larzac provides cool nights and fantastic air conditioning!

At Domaine du Pas de L' Escalette, Julien Zernott and his partner Delphine work as naturally as possible with southern grape varieties. The vines at Domaine du Pas de L' Escalette have been cultivated using certified organic methods since the 2012 vintage and are now biodynamic, without the use of synthetic chemicals, and the soils are worked to exacerbate the terroir and produce high-quality grapes, harvested by hand with the utmost care, who is also the talented winemaker at Domaine Henri Pellé, in the Menetou-Salon appellation.

Initially nicknamed "la cuve à maman", this wine is made by Delphine, who renews the experiment every year by blending carignan, cinsault and grenache. A red with a beautiful intensity of fruit, accompanied by hints of garrigue. An excellent balance between finesse and freshness, with a lovely bitter finish. A must-try!
