plot-by-plot selection of grapes by variety. De-stemming, crushing, reception by gravity in temperature-controlled stainless steel vats. Cold maceration and pumping over. During vinification, punching down and hot maceration. Long vatting period. Free-run wine only

Breeding

in French oak tuns. Each grape variety is aged separately for the first 12 months. After blending, the wine is relocated to foudre for 12 months.

About the wine:

Nose of tapenade and garrigue, structured and spicy on the palate.

About the domain :

The ten or so hectares planted on this north-facing slope of the Alpilles, on clay-limestone soils, produce increasingly accomplished reds that can evolve well over time, with a freshness on the finish that's just right. Neil Joyce can be proud of his latest vintages.
