Established in 1999, the vineyard now covers 17 hectares, farmed organically. In addition to effervescents and dry whites, Vincent Carême produces moelleux from his best terroirs. He also produces desteen (the local name for chenin) near Cape Town, South Africa, under the Terre Brûlée label.

About the domain :
The discreet Vincent Carême, who also produces steen (the local name for chenin) in South Africa under the name Terre Brûlée (40,000 bottles a year), is now one of the leading lights of the Vouvray appellation. On the 17.5 hectares of Chenin vines planted on the flinty clay soils of Vernou-sur-Brenne and Nozay, meticulous organic farming (certified in 2007) ensures healthy, bright grapes in the cellar. This forty-something tends towards increasingly dry wines, but his Le Peu Morier and Tendre energetically integrate residual sugars, offering salty, sapid whites. The demands are taken even further with the start of biodynamic treatments, and ageing in old barrels (400 l) is increasingly precise. These wines are very meticulous.
