Cultivated on hostile soils, the Lledoner Pelut (70%) and Syrah vines produce small yields for this cuvée with Catalan accents. Concentrated and delicate, Extrême rouge 2016 expresses itself on notes of black fruits and spices. A wine loaded with sunshine!

70% de-stemming (30% whole bunches), no crushing, spontaneous fermentation in new 500L French oak barrels after 3 days of maceration, in contact with the skin for 21 days, vertical pressing.

Breeding

In 500L barrels and stainless steel tanks on fine lees for 20 months, no fining or filtration.

About the domain :

Paul Old cultivates these old vines between Corbières and Roussillon biodynamically. The minimalist approach in the cellar produces both highs (Prioundo and L'Extrême, in white) and lows, with gas saturation in certain cuvées and an occasional lack of clarity. The wines do, however, know how to age, and benefit from aeration.
