About the domain :

Paul Old cultivates these old vines between Corbières and Roussillon biodynamically. The minimalist approach in the cellar produces some highs (Prioundo and L'Extrême, in white) but also some lows, with gas saturation in certain cuvées and an occasional lack of clarity. The wines do, however, know how to age, and benefit from aeration.
