Sparkling
Whatever its origin, whatever its composition, each sparkling wine is a unique product, a product that carries with it a tradition and know-how. The vineyards of northern Europe (Champagne, Alsace, Germany) traditionally produce wines suitable for the production of quality sparkling wines. By adapting growing conditions, most French and European vineyards can produce sparkling wines or basic wines suitable for making sparkling wines.

The main ingredient in a sparkling wine made by secondary fermentation is a still wine that serves as the base for the sparkling wine. The addition of liqueur de tirage and the action of yeast transform this wine into sparkling wine.

EU regulations, which are relatively complex, classify sparkling wines into different categories, each characterized by distinct production methods and alcohol levels: Vin Mousseux (VM), Vin Mousseux de Qualité (VMQ), Vin Mousseux de Qualité Produit dans une Région Déterminée (VMQPRD) and Crémant. Other related categories include Vin Pétillant (VP), Vin Pétillant de Qualité Produit dans une Région Déterminée (VPQPRD), Vin Mousseux Gazéifié and Vin Pétillant Gazéifié.
