Le vin de Cassis est l’un des premiers à avoir reçu l'appellation d’origine contrôlée dès 1936. L’AOC Cassis est produite par 12 domaines dont les 196 hectares de vignes sont exclusivement situés sur la commune de Cassis.
Le vignoble de Cassis est protégé du mistral par la hauteur impressionnante des collines avoisinantes. Dans cet amphithéâtre, Cassis est sous la dominance d'un micro-climat favorable à la culture de la vigne de qualité.
