L'appellation Moulin-à-Vent s’étend sur les deux seules communes de Romanèche-Thorins en Saône-et-Loire et de Chénas dans le Rhône. Le décret de reconnaissance de l'appellation date du 11 septembre 1936, mais, dès 1924, le tribunal de Mâcon, chargé de régler les litiges nés des contrefaçons d'un vin déjà réputé, avait défini les limites géographiques du cru et, ainsi, en quelque sorte, consacré la naissance de l'appellation Moulin-à-Vent, plus de 10 ans avant la loi instituant les A.O.C.
Le terroir de Moulin-à-Vent se caractérise par des arènes granitiques roses friables qu'on appelle gore, infiltrées ici et là de filons de manganèse. Ce minéral constitue l'une des spécificités de l'appellation. La vinification se fait en grappes entières. Cette méthode est particulière au Beaujolais. Après encuvage et première fermentation alcoolique, le raisin est pressé. Jus de tire et jus de presse sont alors assemblés avant une 2e fermentation, malo-lactique. Son rôle est d'assouplir les vins en leur ôtant de l'acidité. Pour exprimer le maximum de composants et donner aux vins Moulin-à-Vent de la structure, de nombreux vignerons utilisent des techniques consistant à immerger le raisin dans le jus, au cours de la fermentation : grillage, pigeage, délestage ou remontage. Bien charpentés, une partie des vins de Moulin-à-Vent peuvent faire un séjour en fûts pour obtenir des cuvées fûts de chênes permettant au vigneron d'élargir la gamme des vins qu'il propose.

En effet, contrairement aux vins des AOC Beaujolais et Beaujolais-Village qui se dégustent jeunes, le vin Moulin à Vent, à l’instar du Morgon et du Chénas, a un potentiel de garde de 3 à 10 ans, parfois plus pour les meilleurs millésimes.
