The estate's vineyards Le Brun-Servenay are established on limestone or clay-limestone soils, which ensure perfect drainage, allowing excess water to infiltrate, while keeping the soil sufficiently moist. What's more, chalk has the ability to store and release the sun's heat, playing an extremely beneficial regulatory role. The various stages in the winemaking process, from blending wines for ageing with those of the year to ageing in the chalk cellars, are carried out with the greatest respect for the Champagne tradition.
