In 1531, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, produced an unusual white wine in their cellar, which bubbled naturally in its corked glass bottle. Limoux was the origin of the world's first sparkling wine. The Limoux AOC produces both still and sparkling wines, the most famous of which is probably Blanquette de Limoux.
