"The 2023 Nautical Dawn comes from the granite soils of Sinai Hill and was assembled at Cartology until 2017. Chalk powder, a touch of dry honey and lanolin appear on aeration. The delineation is superb and the wine is full of energy. The palate is wonderfully balanced, but perhaps a little more tropical than Fire by Night. "Composed of 75% Cabernet Sauvignon, 14% Cabernet Franc and 11% Merlot, the 2019 Paul Sauer offers aromas of oaky pencil lead, turned earth and dark red and black fruit flavors on the nose before layers of oak spice and blackberry floral notes emerge. Medium-bodied, the wine is still youthful with a juicy, tannic edge, while succulent acidity and a pop of bright red fruit flavors radiate through the mid-palate. The finish is firmly tannic and needs a little time in bottle to find its rhythm. Give it two more years, and drink it over the next two decades." (Wine Advocate 2022)

"Bonne Nouvelle 2006 is the first vintage to be fermented in open 500-liter barrels. It has a ripe, well-defined bouquet of macerated black cherries, licorice, with a touch of soy and a hint of mint.
