Cider
The natural phenomenon of alcoholic fermentation in apples has been known since ancient times. French-style cider comes in different types: doux, slightly sweet, with an alcohol content of less than 3°; demi-sec, with an acquired alcohol content of over 3°; and brut, more bitter, with an alcohol content of around 4°. Traditional cider is characterized by a more intense flavor and a slight natural residual cloudiness, with an acquired alcohol content of over 4°.

Some ciders are flavored. Cidre bouché comes in a champenoise bottle, usually 75 cl, closed with a wire worm and mushroom cap. Normandy cider is protected by five A.O.C. cidricoles, guaranteeing product quality through selection of regional apple varieties and strict management of production methods: Calvados, Calvados Pays d'Auge, Calvados Domfront, Cidre Pays d'Auge and Pommeau de Normandie. L'Argelette (the name given by the old-timers) refers to the schistose pebbles on which the orchard stands. A "Grand Cru" cuvée made from old trees and as many varieties as possible. The fruit is blended in the same way every year: 40% bitter, 40% sweet and 20% tart, in keeping with the vintage. A complex, vinous cider with good ageing potential, thanks to its balance of substance, acidity, roundness, fullness and minerality.

Notes of baked apples, rhubarb and stone fruits on the nose of La Sansée, a brut cider with no added sulfites, followed by wild touches after aeration. Very fine, lively bubbles accompany a rich, intense palate of fresh applesauce, with wild notes of cut hay and fresh wood. The pretty finish, balanced between tannins and acidity, extends to a long finish. A must-try!

Ciderée Brut is a lovely, clear golden yellow with fine bubbles. Fresh and delicate, the nose offers notes of yellow fruit, tarte tatin, fresh apples and honey. The palate is lively and delicate, with a straightforward attack sustained by lovely aromas of apples and dried apricots, with a hint of vanilla, and a sweet finish. Delicious!

Halfway between brut and doux, the Brut Tendre cuvée, which still has some residual sugar, still offers a fine balance between fruit and substance. Slightly windier by nature, it's the perfect accompaniment to a meal of everyday cooking... A great deal of delicacy!
